bhutte ka keesh || fajita

hey friends......i hope every one is good and safe....................here i am with another recipe................called bhutte ka keesh..............wait what bhutte ka keesh????? yes u heard right bhutte ka keesh it is a famous dish from indore ...................and yes indore is a very famous in street style food. in all over m.p. indore is very famous for street food. if you ever visit indore so plz visit chappan dukan and sarafa bazar here you will get the awesome chaupati food.
but due to this pandemic we are not able to consume outside food so no problem............we will make it at our home. but before that we talk about the name "bhutte ka keesh" bhutta means corn and the keesh is Marathi word means grated. 


we made it with desi corn not by sweet corns. because the taste of desi corn is natural and bhutte ka keesh aka fajita is made up with desi corn. and my mom is very particular about the authenticity of desi food. 
second thing that the corn silk is very beneficial for our body Corn silk is used for bladder infections, inflammation of the urinary system, inflammation of the prostate, kidney stones. It is also used to treat congestive heart failure, diabetes, high blood pressure, fatigue, and high cholesterol levels. see lots of benefits and we just through it. so from today onward just boil the water add corn silk strain it and drink it.



personally i love the flavor of curry patta ......and we have to add it to our diet it is very beneficial and very healthy for body and second this it makes your dish beautiful by looks or by taste. so we will add curry patta in it and make it flavorful and delicious.

so lets discuss the recipe of "bhutte ka keesh"

ingredients


2 corn grated only grate the kernels ont the white hard part.
7-8 leaves of curry patta 
ghee  for tempering
1 tsp mustered seeds
1 tsp cumin seeds 
1/2  tsp hing
1/2 tsp turmeric powd
1 tsp salt
1/2 tsp sugar
1-2 green chillis chopped
1 tbs lemon juice
coriander leafs for garnish 
grated fresh coconut for garnish

method

  • take a clean pan bring it into heat add ghee allow it for heat.
  • add mustered seeds wait till the crack.
  • add cumin seed, green chilli,curry patta, hing, turmeric pd.
  • then add grated corn stir well then add salt cover it with lid cook it for 8-10 min .
  • consistency will be like halwa.
add sugar lemon juice stir then add coriander leafs and grated coconut . your bhutte ka keesh is ready serve hot with chai and rainy weather.

gehun(wheat) ki kheer 

hey there,hope you all are doing well.

be safe guys and stay home and make delicious dishes........and try a recipes from A PINCH OF SALT ......i hope you tried some of dishes.......and keep trying so today i am going to share you gyus a beautiful and yummy dessert.....and yes it also from my mom's kitchen so today we will talk about kheer yuo all heard about rice or chawal ki kheer, suji ki kheer, or sabudana kheer but today we have a speical kheer called gehun ki kheer...........yes gehun(wheat).......sounds like different know but yes its famous in madhya pradesh or specially in bundelkhand its a region of madhya pradesh.well people are making it usually but in some places they have their own certain reasons of making it.

The word 'Kheer' is derived from the  sanskrit word for milk ksheer. Ksheer is also the archaic name for sweet rice pudding
Kheer was a part of the ancient Indian diet and is mentioned in the Ayurveda 


so, basically it is made up with a broken wheat or you can say kuta hua gehun.......and yes in this kheer people are using diffrent gehu called "kathiya gehun" or "laal gehun" thats why this kheer is unique and different the way of making it also different or special since kheer is an very important dessert in Indian cuisine so as same as its important and special in every religion we all know India is a democratic country.
like sewiyan is special for some, paysam is special for some, phirni is for some.......................................lets back to the topic why this laal gehun ki kheer is healthy However, for people who tolerate it, whole-grain wheat can be a rich source of various antioxidants, vitamins, minerals, and fiber.
and second thing we are using jaggrey instead of sugar...........as we all know sugar is very harmful for our health...................and white poison for some.


so now the recipe of it........................guys you can make it at the occasion of rakshabandhan and ........start your rakhi procedure by gehun ki kheer
there you go


ingredients-:
1/2 cup of broken laal gehun or broken wheat if you dont have laal gehun
1/2 lt of  milk
1/2 cup of jaggrey 
1/2 cup of khoya
2 tbs of chopped and roasted dry fruit including chirongi daana 
1/2 tsp green cardamon powder
 
a pinch of salt
method
firstly we have to soak our gehun(wheat) for 4-5 huors.
then pressurecook your soaked wheat with  3 cup of water for 7-8 whistel then turn off the range.
after some times remove a lid of pressure cooker again bring it into a heat and add milk, stir  well add khoya, cardamom powder cook it till wheat become soft.
at last add jaggrey and mix well. turn off the flame and and serve hot or chilled.
personally i like chilled.
and why we add jaggrey at last because it prevent milk to curdle

classic hummus,
we will discuss about hummus
 but here we have to know the difrence between chick pea and kala chana
Chickpeas, the main ingredient of conventional hummus, have appreciable amounts of dietary fiber, protein, vitamin B6, manganese and other nutrients 
you make a creamy hummus at your home 

ingridents

1/2 cup of soak and boil chickpea
5 tbs tahini paste (1/2 cup roasted sesame+3 tbs olive oi make a fine powder of it then blend with olive oil)
2 tbs lemon juice 
1 1/2 salt
5 tbs olive oil
1 tbd minced garlic
1 cup chilled water

method
take a blender bring your boil chickpea into it then add tahini paste 
add garlic salt blend all together and add chilled water if required
blend till creamy texture then add lemon juice and olive oil and again blend.
here your hummus is ready 
you will love it

so about hummus Although multiple different theories and claims of origins exist in various parts of the Middle East, evidence is insufficient to determine the precise location or time of the invention of hummus.Its basic ingredients—chickpea,sesame,lemon and garlic—have been combined and eaten in the Levant over centuries
 Gram flour contains a high proportion of carbohydrates, higher fiber relative to other flours, no gluten, and a higher proportion of protein than other flours.
here we have  some of gram flour preparation which is prepared in Indian kitchen every day

the gram flour and garbanzo flour are from same family grain but garbanzo flour are made up by chickpea and gram flour are made up with chana daal ,chickpea is widely used in Greek cuisine  and indian as well but kala chana is basicaly a indian grain and only used in india thos who are following glutej free diet they can consume both grains. 
so here we have a combination of gud (jaggrey) and roasted chana (phutana)
which control your blood pressure and cholesterol .

so basically india having a small small statesbut in m.p. they consume roasted chana called "hora" normally people making jhol sabji and mithai, kachori by green chana. and Indian are creative they can make a lot of thing by single item.

here we have another recipe "creamy pasta salad" salad having its own nutritional values and it a very good way to feed this kind of salads to your kids by this they are able to having all kind of vegetable and nutrition.
this is rich and creamy texture will win your heart .............................the aroma of oregano and fresh vegetables is awesome this is a dish which you can make in a mins and by ingredients which is available in your fridge.
CREAMY PASTA SALAD



here you go   

INGREDIENTS-:

for dressing

Mayonnaise 3 tbs

Cream 3 tbs

Salt 2 tsp

Blackpepper 1 tsp

3 tbs of tomato ketchup

Oregano- 1tsp

For salad body

Pasta 500 gm

Corn ½ cup

Bell pepper / capsicum ½ cup

Tomato ½ cup

Olives 2 tbsp

METHOD-:

·         Firstly boil your pasta we used fusilli pasta add your pasta into a boiling water for 4 min strain it toss with oil and keep aside.

·         Take a mixing bowl make creamy dressing add mayo, cream, seasoning oregano, olive oil, ketchup, mix it well.

·         Then add pasta and your veggies, olives.

·         Toss it well and serve chill.

 

Note:- while boiling ur pasta add salt and oil it will prevent stickiness.

this is a drink which will gives you a tickle....its punch are very exciting.
i made this drink exciting by adding ginger and pepper.


by heard this name including pepper you may will be on shock
but nope its very delicious and yummy.


so here we start with ingredients
ingredients:
1 glass of fresh orange juice squeezed 
1 tsp ginger
2 tsp mint
1 pinch of red chilli powder


you just have to blend it and strain it and serve chill.
that's it its a very short process and very good for your health and with a unique touch.

kathal curry



Here jackfruit curry( kathal ki sabji) with steam rice and Phulkas.the flavourful and aromatic curry is prepared in Indian homes.... #maakehaathkakhana
.there is no comparison between the local taste of food the way of preparation is authentic and old.... #loveit❤️ The cuisines of many Asian countries use cooked young jackfruit. In many cultures, jackfruit is boiled and used in curries as a staple food.
INGRIDENTS:-
JACK FRUIT 1CUP[CUTED INTO DICE SHAPE] 
1 CUP (ONION,GINGER,GARLIC PASTE)
1 CUP TOMATO PASTE
2 NO. BAY LEAF
1 CINNAMON
1 BLACK CARDMOM
2 GREEN CARDMOM
1 STARANISE
1 TSP CUMIN SEEDS
1 TSP HING
1 TBS RED CHILLI POWDER
1 TSP TURMERIC POWDER
1 TBS GARAM MASALA
OIL FOR FRYING

METHOD:-
FISRTLY WE HAVE TO FRY OUR KATHAL GOLDEN BROWN keep it side.
put a pan in the range add 2 tbs of refined oil then add whole spices
waiting for crack
then add ogg paste add salt stir it for 5 to 10 min.
then add tomato paste stir it and add all powder spices leave it for 10 minutes oil will come on top then add golden brown kathal add 11/2 cup water mix it and cover it for 10 mints.
then add finely chopped coriender.then the aroma of that curry.......u cant control yourself.
then add julien ginger.
serve hot with phulkas and plain rice.
